Cooking made easy by Bibi Sarkar

Surangama Datta may not be a familiar name in the culinary world, but Bibi Sarkar sure is! We have all tasted Bibi di's wonderful food at some point or the other at Bibi of Taajas. Now, she offers her own master classes, where she demonstrates 4 dishes within 2 hours. 
The day we went was a Saturday, around 5pm. Owing to some problems, the class had to begin at 5:20pm. We were wondering how could Bibidi wrap up everything within 2 hours. The menu for that day was Pork Vindaloo, Mutton Moussaka, Chicken Satay and Vegetable Jambalay. Bibi di started prepping for the Chicken Satay first. She gave us certain pointers, like the difference between dark and light soy sauce and how one should rub the spices in their palm before adding them to a marinade, to enhance the flavour and smell of the spices.

Once this was done, Bibidi moved on to cooking the Vindaloo. She had marinated it the night before. At first she started cooking sliced onions in mustard oil. She gave a great tip to making gravy using the onions, which is to keep adding water while cooking the onions and stir them continuously. Then she added the pork and some water and let it braise. Then she moved on to the Mutton Moussaka.

Finally the cooking ended with the Vegetable Jambalay. It was the easiest of the lot and if on any day, your maid doesn't come, do make it. The recipe for it is given at the end of the post (not in Bibidi's exact words, but what our representative saw and learnt).

All the food was cooked by 7pm. Yep. Less than 2 hours. We got to sample the food, which was simply out of the world.

Vegetable Jambalay:

Heat white oil in a pan. Add 1 chopped onion to it and 1tbsp of Garlic. Fry till the smell of raw onions is gone. Add 2 chopped tomatoes. Add a bit of salt, to let the water drain out of the tomatoes. Once the water has been drained, add boiled vegetables of your choice- cauliflower, beans, peas, carrots, capsicum etc. This should be around 2 cups. Finally, add a medium bowl of boiled rice. Mix well and add salt, pepper and oregano to taste. Your dish is ready to be eaten :)
